



All my coffee is roasted in a small batch drum type roaster over infrared heat to endure proper bean development throught the roast All coffee is then vacuum sealed to ensure freshness. Each batch is individually customized to bring out the finest attributes each coffee has to offer. This is most important to ensure that the flavor of the coffee is captured during when the actual coffee brewing that is done in the comfort of your own home or café. Listed below are the varying degrees of roast, flavors and brightness levels that arise from each coffee.
Sumatra: Typically a dark to medium dark roast, this coffee has a very low acidity level and the body of the brewed coffee is bold, strong or heavy. The flavor of this coffee exhibits a powerful, robust, hearty, earthy smooth tone which goes well with rich desserts that contain dark chocolate or caramel.
Costa Rican: A medium to light roast is used to preserve the brightness of the bean without introducing bitterness. This coffee has a medium to high brightness and the body of the actual brewed coffee is light. The flavor exhibit a well balanced, intense but sweet to tangy flavor which goes great with breakfast and especially toasted bread or muffins.
Papua New Guinea: For this coffee, a dark to very dark roast most often brings about the best in your coffee experience. It has a very low acidity and the body of the brewed coffee is bold, strong and heavy exhibiting powerful, robust, hearty, earthy smooth tones. Columbian: Light to medium roast brings out the best in this coffee. It has a medium to high brightness and the body of coffee brewed is relatively light. Guatemalan: At a mild to medium roast, this coffee has a light body and a medium to high brightness giving it an intense, sweet to tangy, but balanced flavor. This coffee will go great with breakfast, and toasted bread or muffins.
